Cashews have a lower fat content than most other nuts; approximately 75% of their fat is unsaturated fatty acids. Cashews are also a good source of magnesium, high in proteins and low in carbohydrates, rich in copper which is needed for maintaining healthy collagen; a substance that lines blood vessels and supports the skin and joints. Cashew nuts are high in their contents of antioxidants, vitamin E, protein, minerals and magnesium which helps in protecting against high blood pressure, muscle spasms, migraine headaches, tension, soreness and fatigue
Cashews can be kept in an airtight container for up to six months in the fridge, or for up to one year in the freezer. If you plan to store cashews for longer than one month, they should be transferred to an airtight container or kept in their original package and placed in a freezer bag.
